It’s Sourdough Sunday!

I’ve been feeding my starter for 5 days and am finally baking with it!!

Every time I feed my sourdough starter, I drain off enough “discard” to keep the starter at about 1/4 cup.

Sourdough discard can be used to make an array of yummy items. I used mine to make some delightful pancakes, perfectly crunchy on the edges with a lovely fluffy interior.

I’ve compiled several favorite sourdough discard recipes on my Pinterest: UnaPocha COMIDA

I also baked my first sourdough loaf! It was deeply satisfying.

Behold the crumb!

This loaf was paired with Bolivian butter and devoured within hours.

The recipe I used comes from the blog The Clever Carrot:

Artisan Sourdough with All Purpose Flour

In these uncertain times with so many things beyond our control, this miracle of flour, water & salt gives tasty comfort.

Buen provecho!
